Shaved Brussels
INGREDIENTS
2 lbs large brussels sprouts
1 medium shallot
2 TBSP olive oil
INSTRUCTIONS
Using a mandolin slicer, shave the brussels sprouts thin using the stem as a handle. Discard stems. Peel the shallot and use the mandolin to slice it thinly. Afterward, chop the shallot until minced. Heat the olive oil in a large cast iron pan or wok. Saute the shallot in the olive oil until translucent, approximately 1 minute. Add the shaved brussels to the pan, salt if desired, and saute continuously until cooked through.
